Henne has some great resources for DMX reception on an AVR - These are targetted at a Mega8515, but it was not difficult to port his DMX reception library to a Mega168 on my Boarduino. There's a standard protocol for DMX-over-Ethernet, I think it's called E1.31 - there are a few people working on economical E1.31-to-DMX bridges. Use another device to receive Ethernet and output DMX. Use an AVR to receive DMX and control lights, either with direct PWM, or by bridging DMX to another protocol (like, for example, the digital RGB strands Adafruit sells). I question whether you want to control a single RGB LED using Ethernet. I think it's the SN75176 but I'm not 100% sure. When I get home I'll try to pull up the part numbers for the RS-485 transceiver I use. logic 1 is 5v on the + line and 0 on the -, logic 0 is 0v on the + line and 5v on the. DMX uses RS-485, typical voltages are +5 and 0 for one line, with the other line being complementary. Those aren't the correct voltages for DMX. It looks like DMX uses +2.5V and -2.5V signal voltage levels, so you're going to need some additional hardware anyways for that. It also looks like there are some DMX shields out there too, which might be a good way to go. The Adafruit one looks like a pretty good deal.
